Vegan Chocolate Mousse


This recipe is not only for Vegans, but can also be enjoyed by anyone who loves creamy chocolate desserts! It is so silky and rich. As an added healthy bonus, it is packed full of Essential Fatty Acids.

Yields: 4 servings

INGREDIENTS:

1 large ripe avocado

¼ cup cacao powder

¼ cup raw organic local honey OR Maple syrup (to make it vegan)

¼ cup coconut milk

1 tsp. vanilla extract OR ½ vanilla bean

Pinch of sea salt

1 Tbsp. chia seeds

2 Tbsp. raw cacao nibs

TO MAKE:

  1. Put all ingredients into a blender

  2. Puree until well blended and smooth

  3. Divide into 4 small custard dishes

  4. Refrigerate for an hour or until completely chilled
